I’m a big fan of unagi-don (marinated eel on rice) so I decided to make the same style of dish with fish fillets. I chose Pacific Saury, also known as Sanma in Japan because it cut into nice long fillets and has a great sweet and fatty taste when fried. lol just kidding, I have no idea how it tastes when fried, it was just available at the Japanese market and looked cool. You basically just fillet the fish, coat in a seasoned flour, fry it, and finally sauce it. Then put it on rice with other fancy shit like flying fish roe and some picked daikon to balance out the sweetness and you have a delicious rice bowl.
